I have been on a peanut butter kick lately. I don’t know what it is but I just can’t get enough. I’ve been making peanut butter sandwiches, adding them to my banana smoothies and always making sure to leave just a bit too much on the knife so that I have to lick it after. It can’t be helped. Its like the ultimate pregnancy craving…without the pregnancy (repeat: not pregnant…let’s not start rumors!)

So it’s only natural that when ViSalus contacted me to create a recipe with their Vi-Shape Shake mix, my mind immediately went to peanut butter. And since it’s been blisteringly hot here lately, my second thought was to make something that didn’t require heat. Or shopping. For those who don’t know, the Vi-Shape Shake Mix (try saying it 10 times over…) is a gluten-free, lactose-free, low sodium and low fat mix. It is advertised as a meal replacement for weight loss but in the context of this post, I’m using it in an every day context as an addition to a well-rounded diet. The first thing I noticed when I opened up this bad boy was that it smelled incredible. Even this nasty summer cold I’ve been fighting couldn’t keep the sweet smell away. With it smelling so sweet, I already knew that I wouldn’t need to add any sweetener to my creation so maple syrup and brown rice syrup remained in their respective homes. It didn’t take me long to figure out the best way to make use of this sweet little treat. I give you….no-bake peanut butter recovery bars. They take about 5-10 minutes to make, an hour to set and an embarrassingly short amount of time to devour.

What’s great about this recipe is that you can change it up to suit your tastes as well as what you have in your pantry. I decided to go with only stuff I already had on hand to avoid a trip to the grocery store. Thankfully, everything turned out and I wasn’t left with a pile of disgusting bars to choke down because I’m too vain (and cheap) to waste an effort in the kitchen. For example, you can use any nut butter (just be sure to let it come to room temperature to make mixing easier), you can add nuts, agave or maple syrup if you want it extra sweet. Dried fruit like cranberries, cherries or blueberries would also work well if you wanted to make it more like a chewy granola bar.
